Artichoke, Chicken & Rice Casserole

Like so many chicken and rice casseroles, this one's a cinch to make. But the artichoke hearts and the cheeses do seem to elevate the whole affair.

Original recipe yields 6 servings
1 Tbsp. olive oil
1 small onion, chopped
1 small red pepper, chopped
1 carrot, thinly sliced
2 cups chopped cooked chicken
1 cup cooked whole grain brown rice
1 can (14 oz.) artichoke hearts, drained, chopped
1 can (10.75 oz.) condensed cream of chicken soup
2/3 cup milk
1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend
1/2 tsp. dried Italian seasoning
3 Tbsp. KRAFT Grated Parmesan Cheese

Heat oven to 350ºF.

Heat oil in large skillet on medium heat. Add onions, peppers and carrots; cook and stir 3 to 4 min. or until crisp-tender. Remove from heat.

Combine cooked vegetables with all remaining ingredients except Parmesan. Spoon into 2-qt. casserole. Sprinkle with Parmesan; cover.

Bake 40 min. or until heated through, uncovering after 20 min. Let stand 10 min. before serving.

Substitute
Prepare using KRAFT Shredded Mozzarella Cheese for the Shredded Italian* Five Cheese Blend.
Special Extra
Prepare casserole in foil-lined baking dish, making sure there is enough foil extending over edges of dish to cover and seal. Freeze casserole until firm. Remove from dish; wrap tightly with foil. Place foil-wrapped casserole in freezer-weight resealable plastic bag. Label and date. When ready to thaw, unwrap frozen casserole and return to original baking dish. Thaw overnight in refrigerator, then bake as directed just before serving.
Special Extra
Sprinkle with chopped fresh parsley.
