Cook potatoes in boiling water in large saucepan 8 to 10 min. or just until tender; drain.
Heat oven to 350°F. Toss potatoes with all remaining ingredients except parsley in 2-qt. casserole sprayed with cooking spray; cover.

Substitute 1 Tbsp. instant minced onion for the chopped onions.
