Huevos rancheros are a breeze to prepare when you make them with diced hash browns and pre-shredded cheddar!
What You Need
Original recipe yields 4 servings
3-1/2 cups ORE-IDA Diced Hash Brown Potatoes
1 can (8 oz.) tomato sauce
2 Tbsp. canned chopped green chiles
1/4 tsp. garlic powder
1/4 tsp. chili powder
1/4 tsp. dried oregano leaves
4 egg s
1/2 cup KRAFT Shredded Cheddar Cheese

Cook potatoes as directed on package.
Meanwhile, bring tomato sauce, chiles and seasonings to boil in saucepan on medium heat; simmer on medium-low heat 5 min., stirring occasionally. While sauce is simmering, fry or poach 4 eggs.
Spoon potatoes onto 4 serving plates; top with tomato sauce mixture and eggs. Sprinkle with cheese.
Prepare using your favorite ORE-IDA Potatoes, such as Shoestrings, Potatoes O'Brien or Shredded Hash Brown Potatoes.
Garnish with sliced jalapeño peppers before serving.
