What You Need
Original recipe yields 8 servings
2 lb. lean ground chicken
3/4 cup chopped green peppers
1/2 cup chopped onions
1 Tbsp. TACO BELL® Fajita Seasoning Mix
1/2 cup plus 2 Tbsp. RO*TEL Diced Tomatoes & Green Chilies, undrained, divided
1/2 lb. (8 oz.) VELVEETA®
8 flour tortillas (8 inch)

Let's Make It
Heat greased grill to medium-high heat.
Mix chicken, peppers, onions, fajita seasoning and 2 Tbsp. tomatoes just until blended; shape into 8 balls.
Cut VELVEETA into 16 cubes. Press 2 VELVEETA cubes into center of each meatball; flatten into 1/2-inch-thick rectangular patty.
Grill 5 to 6 min. on each side or until done (160ºF). Meanwhile, cook remaining tomatoes until heated through.
Place burgers on tortillas; top with tomatoes. Fold in half.
Serve with sweet potato baked fries.
Prepare using lean ground turkey or ground beef.
Sprinkle 1 tsp. chopped fresh cilantro over each tomato-topped burger before folding tortilla in half.
