Mix meat and black pepper just until blended; roll into 4 balls. Press indentation into center of each ball; fill with cheese and jalapeño peppers. Press meat mixture around cheese and peppers until completely enclosed by meat mixture. Flatten into 3/4-inch-thick patties.
Grill 5 to 6 min. on each side or until done (160ºF), turning and brushing with steak sauce for the last few minutes and adding buns, cut sides down, to grill to toast for the last minute.
Fill buns with burgers and guacamole.
Prepare using fresh jalapeño peppers.
