2 pkg. (9 oz. each) WEIGHT WATCHERS SMART ONES Santa Fe Rice & Beans
1/2 lb. cooked boneless skinless chicken breasts, shredded
2 Tbsp. (about 1/2 of 1-oz. pkg.) TACO BELL® Taco Seasoning Mix
1/4 cup water
8 TACO BELL® Crunchy Taco Shells
1 cup shredded iceberg lettuce
1/2 cup TACO BELL® Thick & Chunky Salsa

Microwave SMART ONES, 1 at a time, as directed on package. Use small spoon to scrape sauce off rice mixture into small microwaveable bowl. Reserve sauce and rice mixture (separately) for later use.

Cook chicken in medium nonstick skillet on medium heat 5 min. or until heated through, stirring frequently. Add taco seasoning mix; cook and stir 1 min. Stir in water; cook 1 to 2 min. or until slightly thickened, stirring constantly. Add reserved rice mixture; cook 2 to 3 min. or until heated through, stirring frequently.

Cover reserved sauce with waxed paper. Microwave on MEDIUM (50%) 1 min.

Spoon rice mixture into taco shells; drizzle with sauce. Top with lettuce and salsa.

How to Use the Remaining Taco Seasoning Mix
Cook 1/2 lb. lean ground beef, turkey or chicken with remaining taco seasoning mix and 3/4 cup water as directed on package. Spoon into 6 taco shells. Add your favorite taco toppings. Makes 3 servings.
