Original recipe yields 4 servings
1 Tbsp. olive oil
4 small bone-in chicken breast s (1-1/2 lb.), skin removed
1 can (14-1/2 oz.) no-salt-added diced tomatoes with basil, garlic and oregano, undrained
1/3 cup tomato paste
1 small red pepper, chopped
1 onion, chopped
2 cloves garlic, minced
1/4 cup KRAFT Grated Parmesan Cheese
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 10 min. or until evenly browned, turning occasionally.
Combine tomatoes and tomato paste; pour over chicken. Stir in peppers, onions and garlic; cover. Simmer on medium-low heat 20 min. or until chicken is done (165°F), stirring occasionally.
Remove from heat. Stir in Parmesan. Top with mozzarella; let stand, covered, until melted.
Serve with hot cooked brown rice or whole wheat pasta.
If chicken breasts are large, purchase 2 breasts and cut in half before cooking.
