1 cup TACO BELL® Thick & Chunky Salsa
1 tsp. zest and 2 tsp. juice from 1 lime
2 lb. mixed bone-in skinless chicken breasts, legs and thighs
1/2 tsp. ground red pepper (cayenne)
1/2 cup finely chopped seeded cucumber s
1/4 cup finely chopped ancho chile s
1 Tbsp. chopped fresh cilantro

Heat greased grill to medium heat.

Combine salsa, lime zest and juice. Reserve 1/2 cup for later use. Sprinkle chicken with pepper.

Grill chicken 45 min. or until done (165°F), turning occasionally and brushing with remaining salsa mixture for the last 15 min.

Meanwhile, bring cucumbers, chiles, cilantro and remaining salsa mixture to boil in saucepan on medium-high heat, stirring frequently. Remove from heat.

Serve chicken with salsa mixture.

Keeping it Safe
Let meat, poultry and seafood cook on the grill for a couple minutes after the last brush with a basting sauce. This prevents bacterial contamination since the basting brush was probably used on the food when it was raw.
How to Turn Meat on the Grill
For the juiciest, most flavorful grilled meat, always use long-handled grill tongs or a metal spatula to turn or move meat pieces on the grill. Piercing the meat with a fork causes the juices to escape, resulting in less flavorful meat.
