What You Need
Original recipe yields 7 servings
1/2 cup sugar
1 cup water
1 lb. fresh rhubarb, chopped
1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
1/4 tsp. ground cinnamon
1/2 cup thawed COOL WHIP LITE Whipped Topping

Let's Make It
Mix sugar, water and rhubarb in saucepan. Bring to boil on medium heat, stirring constantly; boil 2 min. Remove from heat.
Add gelatin mix and cinnamon; stir 2 min. until gelatin is completely dissolved. Pour into 7 individual cups.
Refrigerate 3 hours or until firm. Serve topped with COOL WHIP.
Prepare using JELL-O Raspberry Flavor Gelatin.
For a slightly less tart dessert
Increase sugar to 3/4 cup.
Sprinkle COOL WHIP with a dash of ground cinnamon.
Pour mixture into 2-qt. bowl. Refrigerate 3 hours or until firm.
