Have a new kind of caprese salad and make this Chicken & Avocado Caprese! This new take on the traditional recipe is delicious & quickly becoming popular.

Original recipe yields 4 servings
1/2 cup ATHENOS Balsamic Vinaigrette Dressing with Aged Modena Balsamic Vinegar, divided
4 small boneless skinless chicken breasts (1 lb.)
8 KRAFT Slim Cut Mozzarella Cheese Slice s
4 avocado slices
1 plum tomato, cut into 4 slices
1 Tbsp. chopped fresh basil

Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 30 min.

Remove chicken from dressing; discard dressing. Cook chicken in nonstick skillet on medium heat 6 to 7 min. on each side or until done (165ºF). Top with cheese, avocados and tomatoes; cover. Cook 2 min. or until cheese is melted. Transfer to plate.

Drizzle with remaining dressing; sprinkle with basil.

Variation
Prepare using bone-in chicken breasts and increasing the initial chicken cooking time to 12 to 15 min. on each side or until chicken is done.
Using a Dial Instant-Read Food Thermometer
An instant-read food thermometer measures the temperature of a food in about 15 to 20 sec. It is not designed to remain in the food while it is cooking, but should be used near the end of the cooking time. For accurate temperature measurement, the probe of the thermometer should be inserted 2 to 2-1/2 inches deep into the thickest part of the food. If measuring the temperature of a thin food, such as a ground beef patty or boneless chicken breast, the probe should be inserted through the side of the food.
