Let's Make It
1
Heat grill to medium-high heat.
2
Blend barbecue sauce, vinegar, garlic, seasoning and 1/2 cup mangos in blender until smooth. Reserve half the barbecue sauce mixture for later use.
3
Thread meat onto 4 skewers, then thread onions onto separate skewer.
4
Grill meat kabobs 5 min.; turn. Add onion kabob to grill. Brush onion kabob, then meat kabobs with remaining barbecue sauce mixture. Grill 5 to 6 min. or until meat is done and onions are crisp-tender, turning after 3 min.
5
Remove onions from skewer; place in large bowl. Add arugula, dressing and remaining mangos; mix lightly.
6
Spoon arugula salad onto platter; top with meat kabobs. Drizzle with reserved barbecue sauce mixture.
Kitchen Tips
Tip 1
Note
If using wooden skewers, soak skewers in water for 30 min. before using to assemble kabobs to prevent them from burning on the grill.
Tip 2
Creative Leftovers
Refrigerate any leftovers. When ready to serve, spoon down centers of 6-inch flour tortillas; roll up. Place, seam sides down, on microwaveable plate. Microwave on HIGH 3 min. or until heated through. Or for a change of pace, spoon leftovers into pita pockets and microwave until heated through.
Tip 3
Substitute
Substitute 6 cups loosely packed arugula for the 5-oz. package of arugula.
