What You Need
Original recipe yields 6 servings
6 slices OSCAR MAYER Bacon
1-1/4 lb. boneless skinless chicken breasts, cut into strips
1 carrot, shredded
2 mini seedless cucumber s, sliced
1 each red and yellow bell pepper s, chopped
1/2 cup chopped red onion s
1/4 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil
1/4 cup MIRACLE WHIP Dressing
Zest and juice from 1 lemon
1 pkg. (5 oz.) baby spinach leaves
1 pkg. (5 oz.) KRAFT Natural Blue Cheese Crumbles

Let's Make It
Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add chicken to reserved drippings; cook and stir 4 to 5 min. or until done. Remove from skillet; cool.
Layer carrots, cucumbers, peppers and onions in large bowl; top with chicken.
Mix vinaigrette dressing, MIRACLE WHIP, lemon zest and juice until blended; spread over chicken. Crumble bacon. Top dressing mixture with spinach, cheese and bacon. Refrigerate 1 hour. Mix lightly before serving.
Substitute mixed salad greens or romaine lettuce for the spinach.
