Original recipe yields 12 servings
1-1/4 cups vanilla wafer crumbs
1/3 cup butter, melted
1/4 cup boiling water
1 env. (1/4 oz.) KNOX Unflavored Gelatine
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 can (14 oz.) sweetened condensed milk
Juice from 1 lemon
2 cups coarsely chopped fresh strawberries
1/4 cup strawberry jelly
2 tsp. cold water
1 cup sliced fresh strawberries

Combine wafer crumbs and butter; press onto bottom of 8-inch springform pan sprayed with cooking spray. Refrigerate until ready to use.

Add boiling water to gelatine; stir until completely dissolved. Beat cream cheese, condensed milk and lemon juice in large bowl with mixer until blended. Add dissolved gelatine and chopped strawberries; mix well. Pour over crust.

Refrigerate 3 hours or until firm.

Microwave jelly and cold water in microwaveable bowl on HIGH 20 to 30 sec. or until jelly is softened; stir until blended. Cool slightly.

Arrange sliced strawberries over cheesecake just before serving. Brush with jelly mixture.

Variation
Prepare using PHILADELPHIA Neufchatel Cheese and fat-free sweetened condensed milk.

Substitute
If you don't have an 8-inch springform pan, line 8- or 9-inch round pan with foil; spray with cooking spray. Use to prepare recipe as directed. When ready to serve, use foil handles to remove cheesecake from pan before cutting into pieces.
Tip 3
Soften Cream Cheese
Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.
