What You Need
Original recipe yields 4 servings
1/2 lb. sliced fresh mushrooms
2 cups small cauliflower florets
1 onion, thinly sliced
2 cups whole wheat penne pasta, cooked
2 cups CLASSICO Creamy Tomato & Roasted Garlic Pasta Sauce
3 Tbsp. KRAFT Grated Parmesan Cheese, divided
1/4 cup chopped fresh parsley

Let's Make It
Cook and stir vegetables in large nonstick skillet on medium-high heat 5 min.
Add pasta, pasta sauce and 1 Tbsp. cheese; mix well. Cook on medium heat 3 to 5 min. or until heated through, stirring frequently.
Sprinkle with parsley and remaining cheese.
Substitute 1 cup each green and red pepper strips for the cauliflower and onions.
Prepare using pre-cut cauliflower florets and sliced mushrooms purchased from your local grocery store.
