What You Need
Original recipe yields 6 servings
1 env. (1/4 oz.) KNOX Unflavored Gelatine
1/2 cup cold water
1/2 cup boiling water
1/4 cup KRAFT Zesty Lime Vinaigrette Dressing
2 Tbsp. fresh lime juice
1 fully ripe avocado
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 cup chopped seeded tomatoes
1 jalapeño pepper, finely chopped
2 Tbsp. each chopped white onions and fresh cilantro

Sprinkle gelatine over cold water in medium bowl. Let stand 1 min. Add boiling water; stir 2 min. until gelatine is completely dissolved.
Mix dressing and lime juice until blended. Mash avocado in medium bowl. Add sour cream and 1/4 cup dressing mixture; mix well. Gradually add gelatine, whisking constantly until well blended.
Pour into 8x4-inch loaf pan sprayed with cooking spray.
Refrigerate 4 hours until firm. Meanwhile, combine remaining ingredients, including remaining dressing mixture. Refrigerate until ready to use.
Unmold salad. Serve topped with vegetable mixture.
Substitute chopped red peppers for the tomatoes.
For best results, serve this delicious side salad within 24 hours of preparing.
