What You Need
Original recipe yields 16 servings
18 low-fat cinnamon graham crackers, divided
1/3 cup butter, melted
2 Tbsp. brown sugar
4 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
1 cup granulated sugar
1/2 tsp. ground cinnamon
1 Tbsp. vanilla
3 Tbsp. flour
1 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
4 egg s
1 cup BAKER'S Premium White Chocolate Morsels, divided
1 cup JET-PUFFED Miniature Marshmallows

Heat oven to 325°F.
Line 13x9-inch pan with foil, with ends of foil extending over sides. Crush 14 grahams. Mix with butter and brown sugar; press onto bottom of prepared pan. Coarsely chop remaining grahams.
Beat Neufchatel, granulated sugar, cinnamon and vanilla in large bowl with mixer until blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in 1/2 cup chocolate morsels. Pour over crust. Sprinkle with remaining chocolate morsels, marshmallows and chopped grahams.
Bake 45 min. or until center is almost set. Cool completely. Refrigerate 4 hours. Use foil handles to lift cheesecake from pan before cutting into bars.
Remove cheesecake from refrigerator about 30 min. before serving to enhance its flavor.
Blending Neufchatel Cheese
When blending Neufchatel in dessert recipes, make sure the Neufchatel and sugar are completely blended, free of lumps and smooth before adding any other ingredients. If the Neufchatel is too cold, it will not blend easily. To easily soften Neufchatel cheese, place a completely unwrapped package of Neufchatel in a microwaveable bowl. Microwave on HIGH 15 sec. or until softened. Add 15 sec. for each additional package of Neufchatel.
