Original recipe yields 6 servings
1 container (15 oz.) BREAKSTONE'S Ricotta Cheese
1 cup pancake mix
3 egg s
1/2 cup milk
2 banana s, coarsely chopped (about 1 cup)
1 tsp. lemon zest

Let's Make It
Stir all ingredients in large bowl until blended.
Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using scant 1/4 cup batter for each pancake. Cook 3 min. or until bubbles form on tops, then turn over to brown other sides.
Add some fun crunch by sprinkling granola over the pancakes before serving.
Serve with maple-flavored or pancake syrup and additional sliced bananas.
