What You Need
Original recipe yields 6 servings
1-1/2 lb. boneless skinless chicken breasts and thighs, cut into bite-size pieces
1 green pepper, chopped
1 small red onion, thinly sliced
3 cups water
3 cups instant brown rice, uncooked
1/2 tsp. garlic powder
1/2 cup KRAFT Hot & Spicy Barbecue Sauce
1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes

Cook chicken, peppers and onions in large skillet sprayed with cooking spray 3 to 5 min. or until chicken is no longer pink. Stir in water. Bring to boil.
Add rice and garlic powder; cover. Cook on low heat 8 to 10 min. or until rice is tender.
Stir in remaining ingredients; cook 3 to 5 min. or until VELVEETA is melted, stirring occasionally.
Stir in 1 Tbsp. chopped fresh parsley or cilantro.
Serve the Meal With a Salad
