Original recipe yields 24 servings
1 pkg. (2-layer size) red velvet cake mix
1/4 cup milk
1 pkg. (3.4 oz.) JELL-O Red Velvet Flavor Instant Pudding
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup butter, softened
2-1/4 cups powdered sugar
1/2 tsp. vanilla
1-1/2 cups thawed COOL WHIP Whipped Topping
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, broken into small pieces

Heat oven to 350ºF.
Prepare cake batter and bake as directed on package for 24 cupcakes, blending milk and dry pudding mix into batter before spooning into muffin cups sprayed with cooking spray. Cool in pans 10 min.; remove to wire racks. Cool completely.
Beat cream cheese, butter, sugar and vanilla in large bowl with mixer on low speed until well blended. Place in pastry bag fitted with plain tip or in resealable freezer-weight plastic bag with 1/4-inch snipped from a corner.
Cut cupcakes horizontally in half; pipe cream cheese mixture on bottoms of cupcakes. Cover with tops, pressing lightly to hold together.
Microwave COOL WHIP and chocolate in microwaveable bowl on HIGH 1 min.; stir until chocolate is completely melted and mixture is well blended. Dip tops of cupcakes, 1 at a time, in chocolate mixture. Let stand until chocolate mixture is firm.
