Let's Make It
1
Heat oven to 350ºF.
2
Prepare cake batter and bake as directed on package for 24 cupcakes, blending milk and dry pudding mix into batter before spooning into muffin cups sprayed with cooking spray. Cool in pans 10 min.; remove to wire racks. Cool completely.
3
Beat cream cheese, butter, sugar and vanilla in large bowl with mixer on low speed until well blended. Place in pastry bag fitted with plain tip or in resealable freezer-weight plastic bag with 1/4-inch snipped from a corner.
4
Cut cupcakes horizontally in half; pipe cream cheese mixture on bottoms of cupcakes. Cover with tops, pressing lightly to hold together.
5
Microwave COOL WHIP and chocolate in microwaveable bowl on HIGH 1 min.; stir until chocolate is completely melted and mixture is well blended. Dip tops of cupcakes, 1 at a time, in chocolate mixture. Let stand until chocolate mixture is firm.
Kitchen Tips
Tip 1
Size Wise
At 24 servings, this fun recipe is great for a party or classroom celebration.
Tip 2
Special Extra
Sprinkle with red jimmies or other sprinkles just after dipping. Not only does is add a finishing touch, it makes them easier to store with sticking.
Tip 3
Kitchen Tip
To save time and paper liners, the cupcakes are prepared without paper liners because they will end up being cut in half horizontally. No need to remove liners to accomplish this task.
Tip 4
Storing Cream Cheese Desserts
Desserts containing cream cheese, whether baked or unbaked, should be covered and stored in the refrigerator. Use within 5 days.
