Original recipe yields 18 servings
1/2 cup coarsely ground PLANTERS Almonds
9 Tbsp. granulated sugar, divided
3 Tbsp. brown sugar, divided
1 Tbsp. MAXWELL HOUSE Instant Coffee, divided
2 large egg whites
1 Tbsp. boiling water
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
2 oz. BAKER'S Semi-Sweet Chocolate, melted

Heat oven to 250°F.
Cover 2 baking sheets with parchment paper. Mix nuts, 3 Tbsp. granulated sugar, 1 Tbsp. brown sugar and 1 tsp. coffee granules; set aside. Beat egg whites in small bowl with mixer on high speed until soft peaks form. Gradually add 1/4 cup of the remaining granulated sugar and remaining brown sugar, beating until stiff peaks form. Add nut mixture; stir gently until blended.
Drop scant tablespoonfuls of the egg white mixture into 36 mounds on prepared baking sheets; spread each mound to form 2-inch round.
Bake 45 min. or until meringues are dry and can be easily lifted from parchment paper. Place on wire racks; cool completely.
Mix remaining granulated sugar, remaining coffee granules and boiling water until blended. Beat Neufchatel in medium bowl until creamy. Gradually add coffee mixture, beating until blended. Add chocolate; mix well. Spoon 1 Tbsp. chocolate mixture onto flat side of each meringue shell; top with second meringue shell, filling sides together, to form sandwich. (You will have 18 sandwiches.) Serve immediately or cover and refrigerate until ready to serve.
These filled meringues taste best when served immediately. To save time, prepare meringues and filling ahead of time and assemble just before serving. Meringues can be prepared up to 2 days in advance and stored in an airtight container at room temperature. Filling can be prepared a day in advance. Store in tightly covered container in the refrigerator.
