What You Need
Original recipe yields 4 servings
4 cups water
1 cup instant polenta
2 Tbsp. KRAFT Grated Parmesan Cheese
2 Tbsp. butter
2 baby eggplant, sliced
1 red pepper, cut into strips
1 zucchini, sliced
1 red onion, cut into wedges
1 cup cherry tomatoes
1/2 cup KRAFT Balsamic Vinaigrette Dressing, divided
1/2 cup torn fresh basil leaves
1/2 tsp. black pepper
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cut into small cubes

Heat grill to medium-high heat.
Bring water to boil in medium saucepan. Add polenta in thin steady stream, whisking constantly. Cook on medium-low heat 4 to 5 min. or until thickened, stirring constantly. Remove from heat; stir in Parmesan and butter. Pour into 9-inch disposable foil pie plate sprayed with cooking spray; set aside.
Combine eggplant, red peppers, zucchini, onions and tomatoes in large bowl. Pour 1/4 cup dressing over vegetables; mix lightly. Place large piece of heavy-duty foil on grill; pierce foil with fork at 1 inch intervals. Spoon vegetables onto foil. Grill 5 min. or until cooked through, stirring occasionally. Remove from grill; toss with remaining dressing, basil and black pepper.
Scatter cream cheese cubes over polenta. Place pie plate on grill; cover grill with lid. Grill 3 to 5 min. or until cream cheese melts. Cut into wedges; serve topped with vegetables mixture.
