Let's Make It
Heat oven to 425°F.
Reserve 2 Tbsp. dressing for later use. Brush chayote halves evenly with some of the remaining dressing. Place halves, cut side down, in shallow foil-lined rimmed baking sheet.
Bake 15 min. Turn cut side up; brush with additional remaining dressing. Bake 25 min. or until crisp-tender, brushing occasionally with remaining dressing.
Remove from oven; cool 5 min. Cut into wedges; sprinkle with cheese. Serve drizzled with reserved dressing.
Available year round, chayotes are gourd-like fruits that resemble large pears in size and shape. They usually come individually wrapped in a small opened green plastic bag. When purchasing chayotes, look for small firm fruits with unblemished skins. Because of their mild flavor, chayotes complement most other foods. Store in a plastic bag in the refrigerator for up to 1 month.
Combine 1/4 tsp. ground red pepper (cayenne) with the Parmesan cheese before sprinkling on chayotes.
