What You Need
Original recipe yields 6 servings
4 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
4 large bone-in skinless chicken thighs (1-1/2 lb.)
1 can (14-1/2 oz.) diced tomatoes with garlic and onion, undrained
1 can (8 oz.) Italian-style tomato sauce
3/4 cup orzo pasta, uncooked
3/4 cup water
2 cloves garlic, minced
1/4 cup pitted Kalamata olives
1/4 cup chopped fresh basil
4 cups loosely packed baby spinach leaves
1/4 cup ATHENOS Crumbled Feta Cheese with Basil & Tomato

Cook and stir bacon in large skillet on medium heat until bacon is crisp. Remove bacon from skillet with slotted spoon, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add chicken to dripping in skillet; cook 5 min. on each side or until lightly browned. Drain. Add tomatoes, tomato sauce, orzo, water and garlic. Bring to boil; cover.
Simmer on low heat 25 to 30 min. or until chicken is done (165ºF) and orzo is tender. Stir in bacon, olives and basil; cook 2 min. or until heated through.
Top spinach with orzo mixture, chicken and cheese.
Substitute fat-free reduced-sodium chicken broth for the water.
