Crumble chorizo into large nonstick skillet. Add onions and garlic; cook and stir on medium-high heat 5 to 8 min. or until chorizo is browned. Drain.
Stir in potatoes; cover. Cook on medium-low heat 20 to 25 min. or until potatoes are tender, stirring occasionally.
Top with cheese; cook, covered, 1 to 2 min. or until cheese is melted. Serve topped with salsa and sour cream.
