What You Need
Original recipe yields 4 servings
6 cups loosely packed torn romaine lettuce
1 cup coarsely chopped sugar snap peas
1 can (11 oz.) mandarin oranges, drained
1/2 cup slivered red onion s
1 lb. boneless skinless chicken breasts, cut into thin strips
1/4 tsp. black pepper
2 Tbsp. olive oil, divided
1/3 cup orange juice
1 Tbsp. HEINZ Red Wine Vinegar
1 tsp. GREY POUPON Dijon Mustard
1/2 cup PLANTERS Sliced Almonds, toasted

Let's Make It
Toss lettuce with peas, oranges and onions in large bowl.
Season chicken with pepper. Heat 1 Tbsp. oil in large skillet on medium heat. Add chicken; cook and stir 5 min. or until done. Remove from skillet; set aside.
Add orange juice and vinegar to hot skillet; stir to scrape browned bits from bottom of skillet. Stir in mustard and remaining oil until blended.
Place chicken over salad; drizzle with warm dressing. Sprinkle with nuts.
Romaine lettuce is hearty enough to withstand the warm chicken and dressing without wilting much. Try this salad with other sturdy greens like kale or napa cabbage.
How to Toast Nuts
Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.
