What You Need
Original recipe yields 4 servings
1/4 tsp. zest and 1/4 cup juice from 2 lemon s, divided
2 Tbsp. olive oil
1/2 tsp. garlic powder, divided
1 tsp. GREY POUPON Harvest Coarse Ground Mustard
4 small boneless skinless chicken thigh s (1 lb.)
1 cup chopped cucumber s
1/2 cup chopped red onion s

Mix lemon juice, oil, 1/4 tsp. garlic powder and mustard until blended. Pour over chicken in shallow dish. Refrigerate 1 hour to marinate, turning after 30 min.
Meanwhile, mix cucumbers, onions, dressing and lemon zest. Refrigerate until ready to serve.
Heat grill to medium heat. Remove chicken from marinade; discard marinate. Grill chicken 6 to 8 min. on each side or until done (165°F). Place chicken on pita breads. Top with cucumber mixture; fold in half.
Serve with raw vegetables and your favorite fresh fruit to round out the meal.
Serve with tomato slices and shredded lettuce.
