2 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
1 large onion, finely chopped
1 large carrot, finely chopped
2 cloves garlic, minced
1 Tbsp. minced gingerroot
1-1/2 cups basmati rice, uncooked
2-1/2 cups fat-free reduced-sodium chicken broth
1/4 tsp. ground red pepper (cayenne)
1/4 cup chopped PLANTERS Chili Lime Peanuts
2 Tbsp. chopped fresh parsley

Heat dressing in large saucepan on medium-low heat. Add onions and carrots; cook 10 to 12 min. or until crisp-tender, stirring frequently. Add garlic and ginger; cook and stir 2 min. Stir in rice.

Add broth and red pepper; stir. Bring to boil; cover. Simmer on medium-low heat 18 to 20 min. or until rice is tender and liquid is absorbed. Let stand 5 min.

Sprinkle with nuts and parsley just before serving.
