Original recipe yields 4 servings
2 Tbsp. olive oil
1 onion, chopped
1 cup ORE-IDA Diced Hash Brown Potatoes
2 cloves garlic, minced
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1/2 cup water
4 cups small broccoli florets
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
1/3 cup KRAFT Classic Ranch Dressing, divided
1/4 cup OSCAR MAYER Real Bacon Bits

Let's Make It
Heat oil in large saucepan on medium heat. Add onions; cook and stir 5 to 7 min. or until tender. Stir in potatoes and garlic; cook 5 min., stirring constantly to prevent sticking. Add broth and water; stir.
Bring to boil; cover. Simmer on medium-low heat 12 to 15 min. or just until potatoes are tender. Stir in broccoli; cook 5 min. or until tender. Stir in 1/4 cup each cheese and dressing.
Blend soup, in batches, in blender until smooth. Ladle into 4 bowls. Sprinkle bacon bits over soup. Top with remaining cheese and dressing.
Serve this hearty soup with a crisp mixed green side salad tossed with your favorite KRAFT Lite Dressing and a warm roll.
This delicious soup can be prepared ahead of time. Cool, then refrigerate up to 24 hours. To reheat, bring soup just to simmer in saucepan on medium-low heat, stirring frequently.
