1/4 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil
2 large carrot s, peeled, chopped
3 stalks celery, sliced
1 onion, chopped
3 cloves garlic, minced
1 cup dry lentils, rinsed
2 cartons (32 oz. each) fat-free reduced-sodium chicken broth
1 Tbsp. dried Italian seasoning
1/2 cup KRAFT Shredded Parmesan Cheese

Heat dressing in large saucepan on medium heat. Add carrots, celery and onions; cook and stir 5 min. or until crisp-tender. Add garlic; cook and stir 1 min.
Add all remaining ingredients except cheese; stir. Bring to boil; cover. Simmer on medium-low heat 1 hour or until lentils are tender, stirring occasionally.
Remove soup from heat. Serve topped with cheese.
This hearty soup can be prepared ahead of time. Prepare soup as directed, except do not add the cheese. Cool completely. Ladle into freezer containers and freeze up to 1 month. Thaw overnight in refrigerator, then reheat and sprinkle with cheese just before serving.
Serve with crusty whole grain bread and a simple green salad tossed with your favorite KRAFT Dressing.
Italian Sausage Lentil Soup
Prepare recipe as directed, cooking 1/2 lb. crumbled Italian turkey sausage in skillet along with the vegetables.
