3 Tbsp. butter
2 Tbsp. finely chopped shallot s
1/4 cup flour
4 cups milk, warmed
dash ground white pepper

Melt butter in medium saucepan on low heat. Add shallots; cook and stir 4 to 5 min. or until softened.

Add flour; mix well. Cook 2 min. or until bubbly, stirring constantly. Gradually add milk, 1 cup at a time, stirring constantly. Bring to boil on medium heat, stirring constantly; cook 3 to 5 min. or until thickened.

Simmer on low heat 5 min., stirring frequently. Stir in pepper.

Note
Warm milk in medium saucepan on medium heat to about 110°F, stirring occasionally. It should be warm and not hot or boiling.

For Velvety Smooth Sauce
Prepare as directed but do not add pepper; carefully pour sauce through a fine mesh strainer into bowl. Stir in pepper.
