3 Tbsp. flour
2 cups milk, warmed
1/8 tsp. ground red pepper (cayenne)
1/4 cup KRAFT Shredded Parmesan, Romano, and Asiago Cheeses
1/4 cup KRAFT Shredded Swiss Cheese

Melt butter in medium saucepan on low heat. Add flour; mix well. Cook 2 min. or until bubbly, stirring constantly.

Gradually stir in warm milk. Bring to boil on medium heat, stirring constantly; cook 3 to 5 min. or until thickened.

Stir in pepper. Simmer on low heat 5 min., stirring constantly. Stir in cheese; whisk until cheese is melted and mixture is well blended.
Kitchen Tips
Note
Warm milk in saucepan on medium heat to about 110°F, stirring occasionally. It should be warm and not hot or boiling.
Substitute
Prepare using your favorite KRAFT Shredded Cheese.
How to Store Leftover Sauce
Cool sauce; pour into resealable container or cover surface with plastic wrap or waxed paper. Refrigerate up to 3 days.
