Let's Make It
1
Melt 6 Tbsp. butter; cool. Microwave 1 cup milk in microwaveable bowl on HIGH 30 sec. or just until warmed; pour into large mixer bowl. Add yeast, whole eggs, granulated sugar, brown sugar, salt, spices and melted butter; beat with mixer fitted with dough hook attachment until blended.
2
Add 3-3/4 cups flour gradually, mixing on low speed after each addition until blended. Beat 3 min. (Dough will be soft and slightly sticky.) Add nuts, currants and candied fruit; beat until blended.
3
Grease separate large bowl with 1 Tbsp. of the remaining butter. Sprinkle 2 Tbsp. of the remaining flour onto work surface; top with dough. Knead until smooth and elastic, adding remaining flour as needed. Shape into ball. Place in prepared bowl; turn dough over. Cover with plastic wrap. Let rise in warm place 1 to 1-1/2 hours or until doubled in volume.
4
Use remaining butter to grease 15x10x1-inch pan. Punch down dough; place on lightly floured work surface. Knead 1 min. Divide into 24 pieces; roll each into ball. Place in prepared pan.
5
Whisk egg white and remaining milk until blended; brush half evenly onto dough. Reserve remaining egg wash for later use.
6
Spray plastic wrap with cooking spray; place, sprayed sides down, over dough. Let rise in warm place 30 min. to 1 hour or until doubled in volume.
7
Heat oven to 375°F. Use kitchen shears to cut cross in top of each bun; brush with reserved egg wash.
8
Bake 25 to 30 min. or until golden brown; cool completely.
9
Mix powdered sugar, lemon zest and juice until blended. Spoon over buns in the shape of a cross.
Kitchen Tips
Tip 1
Make Ahead
The dough ingredients can be mixed together ahead of time. Mix as directed, then place in prepared bowl and refrigerate overnight. When ready to bake, punch down dough, roll into balls and continue as directed.
Tip 2
Special Extra
Sprinkle additional 2 Tbsp. finely chopped PLANTERS Walnuts over glazed buns.
Tip 3
Food Facts
The milk needs to be warmed in order to activate the yeast. If you prefer to instead heat the milk on top of the stove, pour it into a small saucepan, then cook on medium heat just until warmed (about 100°F). If milk is too hot, it will kill the yeast. Or, if it is not heated enough, the dough may not rise, or might take longer to rise.
Tip 4
Note
Instead of using the egg white for the egg wash, you can instead use a whole egg.
