Combine rice| boiling water| 1 cup cheese and 1/4 cup dressing in 8-inch square baking dish sprayed with cooking spray. Let stand until ready to use.,Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.,Add chicken to reserved drippings; cook 3 min. on each side or until evenly browned on both sides. Place over rice mixture.,Bake 25 to 30 min. or until chicken is done (165°F). Meanwhile| combine remaining cheese and dressing.,Top chicken with bacon| tomatoes and cheese mixture; bake 5 min. or until cheese is melted. Sprinkle with onions.

1 pkg. (8 oz.) KRAFT Shredded Pepper Jack Cheese, divided
1/2 cup MIRACLE WHIP Dressing, divided
4 slices OSCAR MAYER Bacon, cut into 1-inch pieces
4 small boneless skinless chicken breasts (1 lb.)
1/2 cup chopped tomatoes
1 Tbsp. sliced green onions
