Chicken Brine

Make our Chicken Brine for a moist, flavorful whole chicken. Avoid dry meat by using our Chicken Brine and soaking your bird overnight.

1 qt. (4 cups) tap water
1/4 cup sugar
1/4 cup salt
2 Tbsp. HEINZ Apple Cider Vinegar
1/2 tsp. cracked black pepper
1 qt. (4 cups) ice water
1 chicken (3-1/2 lb.)

Cook first 5 ingredients in large saucepan on medium heat 10 min. or until sugar and salt are dissolved, stirring occasionally. Pour into plastic container large enough to hold brining liquid and chicken. Add ice water; stir until ice is melted.

Remove and discard neck and giblets from chicken cavities, if present.

Add chicken to brining liquid; cover. Refrigerate at least 10 hours or up to 24 hours. Remove chicken from liquid; discard liquid. Rinse well with cold water. Pat dry with paper towels. Cook chicken as directed on package or until chicken is done (165°F).

Use either kosher salt or table salt without iodine when preparing the brining liquid. When choosing the container used to brine the chicken, be sure to select one that will fit in your refrigerator. The chicken needs to be completely submerged in the brining liquid. If chicken is not covered, prepare enough additional brining liquid to completely cover chicken.

Chicken neck and giblets can be used to make soup stock or gravy. If unable to use within a few days, freeze until ready to use.

How to Use an Oven Bag for Brining
Place chicken in an oven-roasting bag or brining bag. Place chicken and brining liquid in bag; close bag tightly. Place in 6-qt. stockpot or container. Brine in refrigerator, occasionally turning bag to ensure even brining.
