Mix first 3 ingredients in slow cooker. Place ham, beans, bay leaf and thyme in slow cooker. Pour water over ham; cover with lid.
Cook on LOW 8 hours. Add remaining ingredients to slow cooker; cover with lid. Cook 30 min.
Remove ham to cutting board; let cool 10 min. Slice meat off bones, chop into 1/2 inch pieces. Return chopped ham to slow cooker; cover with lid. Cook 15 min or until heated through. Remove bay leaf before serving.
Substitute dried lima bean or dried navy beans for the butter beans. Good news! This recipe doesn't require pre-soaking of the beans, which saves time and some of the pre-planning.
Heat 1 Tbsp. oil in large skillet. Add 2 sliced green onions and 1 clove minced garlic. Cook and stir 2 min. or until tender. Stir in 1 can (16 oz.) rinsed drained butter beans, 1 pkg. (7.5 oz.) For best results, do not cook on HIGH heat setting. The beans will not have time to cook properly on HIGH.
