Heat oven to 350°F.
Combine flour, baking powder, cinnamon and salt. Whisk eggs and oil in large bowl until blended. Stir in potatoes and sugar. Add flour mixture; stir just until moistened. Chop 4 bacon slices; stir into batter.
Spoon into 12 muffin pan cups sprayed with cooking spray. Crumble remaining bacon; sprinkle over batter.
Bake 20 to 22 min. or until toothpick inserted in centers comes out clean.
