Mix first 4 ingredients in medium bowl until blended. Add wafer crumbs and 1 cup nuts; mix well.
Stir in enough of the sugar, 1 Tbsp. at a time, until mixture is firm enough to roll into balls. (Note: The chocolate mixture will firm up as it cools.)
Roll chocolate mixture into 40 (1-inch) balls. Place remaining nuts in small bowl. Add chocolate balls, 1 at a time, turning to evenly coat each ball with nuts. Let stand until firm.
Substitute unsweetened cocoa powder or additional powdered sugar for the 1/3 cup nuts used to coat the Bourbon Balls.
The flavor of these Bourbon Balls improves upon standing.
Substitute water for the bourbon, and add 1 tsp. rum extract to chocolate mixture before rolling into balls as directed.
How to Store
Place Bourbon Balls in airtight container with sheets of waxed paper between each layer of balls. Store at room temperature.
