Combine flour and baking soda. Beat butter and 3/4 cup sugar in large bowl with mixer until light and fluffy. Add dry pudding mix, egg and vanilla; beat 2 min. Gradually add flour mixture, mixing well after each addition.
Divide dough in half. Roll each half into 10-inch log; wrap in plastic wrap. Refrigerate 1 hour or until firm.
Heat oven to 350°F. Unwrap logs; roll in remaining sugar until evenly coated on all sides. Cut dough into 1/2-inch-thick slices; place, 1 inch apart, on baking sheets sprayed with cooking spray.
Bake 11 to 13 min. or until edges are lightly browned. Cool on baking sheets 5 min. Remove to wire racks; cool completely.

Cut 1 vanilla bean pod lengthwise in half. Scrape seeds from pod halves into combined ingredients in mixing bowl before beating in the egg and vanilla extract.
