What You Need
Original recipe yields 12 servings
1-1/2 cups flour
3/4 cup quick-cooking oats
1/3 cup packed brown sugar
3/4 tsp. CALUMET Baking Powder
3/4 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. sea salt
1/2 cup milk
1/4 cup oil
1/2 cup mashed fully ripe banana s
1-1/2 cups shredded carrot s
1/2 cup chopped PLANTERS Walnuts
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted, chopped

Heat oven to 400°F.
Combine first 8 ingredients in large bowl.
Whisk egg, milk and oil in medium bowl until blended. Stir in bananas. Add remaining ingredients; mix well. Add to flour mixture; stir just until moistened.
Spoon into 12 paper-lined muffin cups.
Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool slightly.
Stir 1/3 cup raisins or dried cranberries into batter before spooning into prepared muffin cups and baking as directed.
Substitute 1 cup chopped apples for the mashed bananas.
Prepare as directed, substituting whole wheat flour for 1/2 cup of the all-purpose flour, and increasing both the baking powder and baking soda to 1 tsp. each.
