Mix up Taco Tuesday with a Shrimp Fajita! This Shrimp Fajita recipe is chock full of veggies, delicious shrimp and a creamy Ranch-guacamole sauce.
What You Need
Original recipe yields 4 servings
1/4 cup guacamole
1/4 cup KRAFT Classic Ranch Dressing
1 Tbsp. fresh lime juice
1 Tbsp. oil
1 large onion, cut into thin wedges
1 red pepper, cut into strips
3/4 lb. uncooked deveined peeled medium shrimp
8 flour tortillas (6 inch), warmed
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese

Mix guacamole, dressing and lime juice until blended. Refrigerate until ready to use.
Heat oil in large skillet on medium heat. Add onions and peppers; cook 4 to 5 min. or until crisp-tender, stirring occasionally. Add shrimp; cook 2 to 3 min. or until shrimp turn pink, stirring frequently.
Spoon shrimp mixture onto tortillas; top with cheese and guacamole mixture. Roll up.
Serve with a side of spicy black beans.
Substitute 1 lb. boneless skinless chicken breasts or sirloin steak, cut into thin strips, for the shrimp. Prepare recipe as directed, adding the meat to the skillet along with the peppers and onions, and increasing the meat cooking time to 5 to 7 min. or until done.
