Original recipe yields 8 servings
1 qt. (4 cups) water, divided
1/4 cup HEINZ Distilled White Vinegar
1/4 cup packed brown sugar
1/4 cup kosher salt
6 cloves garlic, peeled
2 sprigs fresh thyme
1 tsp. crushed red pepper
ice cubes
8 bone-in pork chops (2 lb.), 3/4 inch thick

Reserve 1-1/2 cups water for later use. Pour remaining water into large saucepan. Add all remaining ingredients except ice and chops; stir. Bring to boil, stirring frequently; simmer on medium-low heat 5 min., stirring occasionally. Pour into large heatproof bowl.

Add enough ice to reserved water to measure 1 qt. (4 cups). Add to brine in large bowl; stir. Cool. Add chops. Refrigerate 4 hours.

Heat grill to medium-high heat. Remove chops from brine; discard brine. Pat chops dry with paper towels. Grill 4 to 5 min. on each side or until done (145ºF). Remove from grill. Let stand 3 min. before serving.

How to Broil the Brined Pork Chops
Refrigerate chops in prepared brine as directed; drain, then pat dry. Heat broiler. Place chops on rack of broiler pan sprayed with cooking spray. Broil, 6 inches from heat, 8 to 10 min. or until done (145ºF), turning after 5 min. Remove chops from broiler; let stand 3 min. before serving.

How to Pan-Fry the Brined Pork Chops
Refrigerate chops in prepared brine as directed; drain, then pat dry. Heat large heavy skillet sprayed with cooking spray on medium-high heat. Add chops; cook 2 to 3 min. on each side or until lightly browned on both sides. Reduce heat to medium; cook additional 2 to 3 min. on each side or until chops are done (145ºF). Remove from heat. Let stand 3 min. before serving.
