Turn morning into something special with our Bunny Pancakes recipe. These Bunny Pancakes come to life with coconut ears, fruit faces and chocolate whiskers.
What You Need
Original recipe yields 4 servings
1/2 tsp. water
1 drop red food coloring
1/4 cup BAKER'S ANGEL FLAKE Coconut
1 cup flour
2 Tbsp. sugar
2 tsp. CALUMET Baking Powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup milk
1 Tbsp. oil
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 banana, cut into 8 slices
2 small strawberries, cut in half
1 oz. BAKER'S Semi-Sweet Chocolate, melted

Let's Make It
Mix water and food coloring until blended. Add to coconut in resealable plastic bag; seal bag. Shake until coconut is evenly tinted. Reserve for later use.
Combine next 5 ingredients.
Whisk egg, milk and oil in medium bowl until blended. Stir in sour cream. Add flour mixture; mix well.
Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/4 cup batter for each of the 8 pancakes; cook until bubbles form on tops, then turn to brown other sides.
Place 1 pancake on each of 4 serving plates. Cut remaining pancakes in half; arrange at tops of whole pancakes for the bunnies' ears. Sprinkle insides of ears with coconut. Decorate whole pancakes with banana slices for the eyes and strawberry halves for the noses. Use melted chocolate to make the whiskers. (See tip.)
Drizzle with maple-flavored or pancake syrup. Serve with your favorite cut-up fresh fruit.
For Thinner Pancakes
Add 2 Tbsp. additional milk to prepared batter before ladling onto hot griddle and cooking as directed.
How to Make the Chocolate Whiskers
Spoon melted chocolate into small resealable plastic bag; press out excess air and seal bag. Cut small piece off one bottom corner of bag; use to pipe chocolate onto pancakes for the whiskers.
Substitute your favorite fruits, nuts and/or candies for some or all of the decorations.
