What You Need
Original recipe yields 12 servings
3 egg whites, at room temperature
1-1/2 tsp. HEINZ Distilled White Vinegar
3/4 cup sugar
3 oz. BAKER'S Semi-Sweet Chocolate, finely chopped

Let's Make It
Heat oven to 200ºF.
Draw 12 (1-1/2-inch) circles, 2 inches apart, on each of 2 parchment sheets. Place each parchment sheet, marked side down, on separate baking sheet.
Beat egg whites and vinegar in medium bowl with mixer on high speed until soft peaks form. Add sugar, 1 Tbsp. at a time, beating constantly until stiff peaks form. Gently stir in chocolate; spoon into resealable plastic bag.
Cut 1/2-inch piece off one bottom corner of bag. Use circular motion to squeeze about 1 Tbsp. egg white mixture onto each circle on parchment-covered baking sheets.
Bake 1 hour 10 min. or until meringues are dry and can easily be transferred from parchment to wire racks; cool completely.
For best results, prepare meringues on a cool dry day. High humidity can result in chewy sticky meringues.
The beaters and mixing bowls must be totally fat free or the eggs will not whip up well.
Add 1/2 tsp. vanilla to the beaten egg whites along with the chopped chocolate.
For best results, separate the eggs, 1 at a time, into the bowls to make sure no egg yolks or shells are present. If a small piece of shell falls into the egg whites in the bowl, use a clean spoon, not your fingers, to remove the shell from the bowl.
Grate the chocolate instead of chopping it.
If using a copper bowl to beat the eggs, omit the vinegar.
