What You Need
Original recipe yields 8 servings
4-1/2 cups small cauliflower florets, divided
1 Tbsp. oil
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
1 cup shredded carrots
1/2 cup TACO BELL® Mild Sauce
1/4 cup chopped fresh cilantro
1 Tbsp. lime juice
8 corn tortillas (6 inch), warmed

Let's Make It
Heat oven to 400°F.
Use pulsing action of food processor to process half the cauliflower until coarsely chopped; spoon into large bowl. Repeat with remaining cauliflower.
Heat oil in large nonstick skillet on medium heat. Add cauliflower; cook 8 to 10 min. or until lightly browned, stirring occasionally. Stir in taco seasoning mix. Add carrots and next 3 ingredients; mix well. Cook 1 to 2 min. or until heated through and slightly thickened, stirring frequently. Remove from heat.
Stack tortillas; wrap in paper towel. Microwave on HIGH 1 min.
Spoon cauliflower mixture evenly down centers of tortillas; roll up. Place, seam sides down, on baking sheet sprayed with cooking spray.
Bake 10 to 12 min. or until taquitos are crisp.
You will need to purchase 1 medium head of cauliflower to get the 4-1/2 cups florets needed to prepare this delicious recipe.
