What You Need
Original recipe yields 4 servings
1 lb. fresh beets (about 3), peeled
1/3 cup KRAFT Olive Oil Vinaigrettes - Balsamic
1 red onion, cut into 1-inch chunks
2 cloves garlic, minced
1/4 tsp. ground cumin

Cut beets into 1/4-inch thick slices, then cut each slice into quarters. Add to large saucepan of boiling water; simmer, partially covered, on medium heat 20 min. or just until beets are tender.
Use slotted spoon to transfer beets to colander; drain. Reserve 1/4 cup of the cooking water for later use; discard remaining water.
Heat vinaigrette in same saucepan on medium heat. Add onions and garlic; cook on medium-low heat 10 min. or until onions are tender, stirring frequently
Add beets to onion mixture along with the cumin and reserved cooking water; cook and stir 2 min. or until heated through.
This flavorful side dish can be prepared ahead of time. Cool, then refrigerate up to 3 days before reheating to serve.
Served with roasted or grilled chicken or pork.
