Beat pudding mix, milk and 1/2 tsp. cinnamon in medium bowl with whisk 2 min. Add eggs; mix well.
Dip bread, 1 slice at a time, into egg mixture, turning to evenly moisten both sides of each bread slice with egg mixture. Place in slow cooker sprayed with cooking spray. Pour any remaining egg mixture over bread; cover with lid.
Cook on LOW 4 to 4-1/2 hours (or on HIGH 2 hours).
Combine sugar and remaining cinnamon; sprinkle over French toast. Cook, covered, on HIGH 15 min.
Serve topped with syrup and COOL WHIP.
