What You Need
Original recipe yields 4 servings
1 Tbsp. oil, divided
2 cups BOCA Veggie Ground Crumbles
4 eggs, beaten
1/2 cup TACO BELL® Verde Salsa
1/2 cup canned black beans, rinsed
1/2 cup chopped tomatoes
1/4 cup finely chopped onions
2 Tbsp. finely chopped fresh cilantro

Let's Make It
Heat 2 tsp. oil in large nonstick skillet on medium heat. Add ground crumbles; cook 8 to 10 min. or until evenly browned, stirring frequently. Spoon into medium bowl; cover to keep warm.
Heat remaining oil in same skillet on medium-low heat. Add eggs; cook 4 to 5 min. or until set, stirring occasionally.
Spoon crumbles into 4 serving bowls; top with eggs and remaining ingredients.
Serve topped with BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream.
