Cook pudding as directed on package. Remove from heat.
Whisk whole egg, egg yolk, milk, sugar and vanilla in small bowl until blended. Gradually whisk into pudding until blended.
Pour into 8 (5-oz.) ramekins; sprinkle with nutmeg. Place ramekins in large shallow pan. Fill pan with hot water to within 1/2 inch of tops of ramekins.
Bake 25 to 30 min. or until knife inserted in centers comes out clean. Remove ramekins from water bath; place on wire racks. Cool completely.
Prepare using your favorite flavor of JELL-O Cook & Serve Pudding.
Ramekins baked in a water bath keep the custard tender and creamy by providing insulation. Ramekins baked without a water bath can develop a scrambled egg texture because the custard gets too hot.
