Original recipe yields 4 servings
2 cups chopped cooked chicken breasts
1/4 cup each chopped red and yellow peppers
1/4 cup chopped red onions
1/4 cup chopped PLANTERS Slivered Almonds, toasted
3 Tbsp. chopped fresh basil leaves
2 Tbsp. sliced pimento-stuffed green olives
6 Tbsp. KRAFT Sun Dried Tomato Vinaigrette Dressing made with Extra Virgin Olive Oil
8 butter lettuce leaves (about 1 head)
2 Tbsp. KRAFT Shredded Parmesan Cheese

Combine all ingredients except lettuce and cheese.
Place 2 lettuce leaves, with sides overlapping, on each of 4 plates to make lettuce cups.
Spoon chicken mixture into lettuce cups; sprinkle with cheese.

STOVETOP METHOD: Place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. OVEN METHOD: Spread nuts in single layer in a shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally.
