What You Need
Original recipe yields 12 servings
1 cup water
1 cup chopped dried mangos
2 cups flour
2 tsp. CALUMET Baking Powder
1/2 tsp. salt
1/4 tsp. ground ginger
1/2 cup packed brown sugar
1/4 cup butter, melted
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup chopped PLANTERS Macadamias
2 Tbsp. granulated sugar
1/4 tsp. ground cinnamon

Heat oven to 375°F.
Bring water to boil in medium saucepan. Remove from heat; stir in mangos. Let stand 10 min. or until mangos are softened. Drain mangos, reserving 1/4 cup of the water.
Combine flour, baking powder, salt and ginger in large bowl.
Beat egg with whisk in medium bowl until blended. Add brown sugar, butter, sour cream, mangos and reserved water; mix well. Add to flour mixture along with the nuts; stir just until moistened. (Batter will be lumpy.)
Spoon batter into 12 paper-lined muffin cups. Combine granulated sugar and cinnamon; sprinkle over batter.
Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool muffins in pan 5 min. Remove to wire rack; cool completely.
Stir 1 tsp. lime or lemon zest into batter before spooning into prepared muffin pan cups.
